At a glance

What it is

Daikon radish that has been salted and sun-dried. It is chewy, salty and a little sweet. Some packs are sweetened.

How we use it

Rinse it well in several changes of water, or soak it, to wash off extra salt. Chop it small and fry it into omelettes, or add to congee and fried rice.

Tips

Taste before salting any dish. Keep sealed in a cool, dry place.

Where to find it in Hong Kong

Dried-goods shops and wet-market stalls sell it loose. Packed versions are in supermarkets.

Substitutes

Chopped pickled mustard greens, for a salty crunch. The taste will be different.
