White vs red fermented tofu

Both are salty, creamy seasonings. The red kind adds colour and a different flavour.

Which one to buy

Choose the colour and flavour named in your recipe. A chilli version can be spicy, so read the label rather than judging only by the colour.

Can I swap them?

They share a fermented base flavour, but swapping changes the colour, sweetness and strength. Start with less and adjust to taste. For a dish where red colour matters, use the red kind.

Alcohol and allergens

Both kinds may contain wine or spirits. Check the actual jar; white does not mean alcohol-free. They contain soy and are salty. We do not mark a recipe with alcoholic fermented tofu as kid-friendly.
