Ingredients
2-3 people (6-8 small dumplings)
- 3 eggs, beaten
- 150g minced pork
- 4-5 cooked chestnuts, chopped
- 1 tsp baby soy sauce
- 1 stalk green onion, chopped
- 1 tsp corn starch mixed with 1 tbsp water
- 1 tsp oil for the pan
Method
- Chop the chestnuts.
- Mix the minced pork with the chestnuts, baby soy sauce and green onion.
- Mix the corn starch water into the beaten eggs.
- Heat a small pan on low heat and lightly oil it.
- Pour in a small ladle of egg to make a wrapper about 8 cm across.
- Place a spoonful of filling in the center while the egg is still soft.
- Fold the egg in half into a dumpling shape and press the edge to seal.
- Repeat with the remaining egg and filling.
- Arrange the dumplings in a heatproof bowl.
- Steam on high heat for 10 minutes, until the pork is cooked through with no pink inside.
Tips
Keep the pan on low: the egg skins tear over high heat.
